Another problem arising from this approach is cultural narrowness of Italians if they are too often in the prior backyard, thinking that there is no better than the one that offers their territory and what their mother's kitchen prepares home. This lack of openness can not do the Italians a people further back, in terms of food culture, compared to other countries, where the various cuisines of the world have been in contact with each other by making the taste of the public and open the mentality of the people. The Land of Spices, India boasts of several mouth-watering cuisines which delight the gourmet the world over no end. So much so that when they fail to find Indian food in their respective nations, they, taking the fabled Spice Route, travel to India on the spice trail to enjoy the various tasty and lip-smacking Indian cuisines.
The Indian techniques and methods of cooking can be traced back to about 5,000 years ago. It has been shaped by the land as well as the produce that comes from a specific region; thus, there are varying regional Indian cuisines. Aside from this, their religion has also greatly influenced their cooking. Another factor that significantly influenced the Indian cuisine is the traders as well as the travelers that pass through the region. They leave behind new cooking methods as well as new dishes and new ingredients that the locals incorporate into their cooking. The rulers who ruled also influenced Indian cuisine. But what is most fascinating is that the identity of the original Indian cuisine never got lost. In fact, it has retained its uniqueness, and all those influences only enhanced the cuisine and made it richer.
It is, however, not only complete dishes that the Indian cuisine has introduced in to the Burmese cuisine. It has also given the traditional Burmese cooking style an Indian touch by having Burmese women and cooks use Indian condiments such as Masala (curry powder) what is traditionally not used in Burma. And here the story does not end, the introduction of milk, butter and dairy products such a cheese, yoghurt and sour milk as well as the drinking of black tea with milk and sugar (surprised?) are additional ways in which Indians have influenced the Burmese cuisine. The Chinese have ensured their presence in the Burmese cuisine in two ways. One way was to introduce Chinese-style cooking into Burmese households and restaurants by using previously not known, lesser used or differently combined vegetables such as celery and Chinese cabbage, fungus such as Chinese mushrooms, sauces such as oyster sauce and other things such as bean curd (tofu). The other way in which the Chinese have carved out their place in the Burmese cuisine is Chinese dishes such as Peking-baigin (Peking duck), Kawpyan-kyaw (Spring Rolls) and Pausi (Chinese dumpling). Chinese cooking style, Chinese vegetables, etc. and dishes have become integral part of the Burmese cuisine.
