While the rest of country usually uses sea fish in most of its cuisine, this region is famous for its supply of fresh fish. In spite of the foreign influences, the region specializes in dishes, commonly thought to be typical Italian, such as tomatoes, pasta, and olive oil, in addition to a variety of other Italian dishes such as sauerkraut, dumplings, and potatoes. On Sundays, Goulash is commonly served. Those who are conscious of their health should note that one of the popular ingredients of the region's cuisine is lard. If saturated fat is not good for you, you should inquire about the ingredients used in the food of this region. Many chefs consider lard to be the best ingredient in the preparation of certain delicacies. Needless to say, Italian chefs have no second thoughts about it.

The answers to all the questions I will answer in this preface lie in the following. Not only but also with respect to the 'Burmese' cuisine it is a fatal (but, alas, quite often made) mistake to assume that Burmese and Bamar (Burman) is the same for it is definitely not. Burma is the country and the Bamar are one of the ethnic groups inhabiting Burma. Since the Bamar - also called Burman - constitute the largest ethnic group of this country the British named it after them Burma; and Burma's citizens are Burmese. But not every Burmese is a Bamar. Only members of the Bamar, which is one of Burma's ethnic groups, are Bamar. Subsequently, we have to differentiate between the country Burma, its citizens the Burmese and members of one of the ethnic groups of Burma, the Bamar. This means that there is a Burmese cuisine (the country's cuisine) and a Bamar cuisine (the ethnic group's cuisine) but these two cuisines are not the same. The problem with the original or traditional Bamar cuisine is that no one knows what dishes it comprises. The root problem with this is that no one knows where exactly the Bamar are coming from. If that would be known beyond any reasonable doubt we would also know what their cuisine is.

Ancient Roman Cuisine. Some of the native Roman ingredients used in ancient Roman cuisine include caroenum, defritum, passum, liquamen, saturei, and silphium. Ancient Romans had a wide variety of dishes which included Isicia Omentata (Roman Burger), Minutal Marunum (Seafood Fricassee), Pullus Fusilis (Chicken with Liquid Filling), Aliter Dulcia (Dessert), In Ovis Apalis (Boiled Eggs), Tiropatinam (Soufflee), and In Mitulis (Sea Mussels). Chinese Cuisine. Chinese cuisine is quite popular in the United States as evidenced by the number of Chinese restaurants. The common ingredients used in Chinese cuisine include garlic, scallions, rice wine, ginger, soy sauce, cornstarch, tomatoes, bamboo shoots, and pepper. There are many dishes in Chinese cuisine and some of these dishes are Stewed Lamb with Orange, General Tso's Chicken, Pot Stickers, Lo Mein, Chinese Scallion Cakes, Sweet-and-Sour Chicken, Steamed Dumplings, Duck with Almonds, and Pineapple Fish.

Depending on what kinds of agricultural produce are available, as well as what local and regional flora and fauna have to offer many dishes is not only different but depending on the respective region also different in taste although they have the same name. Is it a coastal region, is the natural environment mountainous or flat, are there rivers, is it dry and arid or marshy and wet, is it hot, is it temperate, is it cold, is the ground sandy or rocky, what is the quality of the soil, how much water for irrigation is available? These and other things are determining factors for what the respective local cuisine has to offer and how it tastes. It was with some surprise that I soon encountered real problems because concerning the cuisine of the Bamar (this is obviously what the Bamar mean with 'Pure Burmese' cuisine) I found that I was trying to find something nothing is actually known about. In other words, no historical records about what the Bamar have eaten exist for which reason it cannot be said what and to what extent the Bamar have actually contributed to what is nowadays called 'Burmese' cuisine.

For example, dishes and typical cuisine of Emilia are Lombard and French-style, cow's meat and pork, butter and milk. Entering Romagna, just out from the province of Bologna, traditional cuisine changes radically: the cheeses are sheep, sheep meat is consumed so much, and you use the extra virgin olive oil. The boundary that determines those differences is what divides the state of the Church and Lombard rule, first tied to the traditions of pastoralism and cultivation of the second related to the breeding of cattle. Such examples, there are dozens, all over the Italian territory, and that is why Italian food has become what it is, a collection of dozens of local and regional cuisines.

Although you will be familiar with north Italian cuisine, you will still be surprised by the wonderful differences in authentic north Italian food and the Italian fare available in America. South Italian Cuisine. The cuisine of south Italy is different. The people of south Italy use more fish in their diet. This variant of Italian cuisine is named "Mediterranean food." In general, south Italian dishes are lighter and healthier. Due to their food habits, south Italians are the healthiest people in the world. One of the factors that makes south Italian diet so healthy is the use of olive oil in most of their dishes.

French Cuisine. French cuisine is one of the most popular cuisines in the world. In 2010, UNESCO added French gastronomy to its world's "intangible cultural heritage" list. French regional cuisines are characterized by the use of locally grown vegetables and fungi like carrot, turnip, zucchini, leek, truffle, porcini, mushroom, and chanterelle. Some of the common French dishes are Pot au feu (Beef Stew), Foie de veau (Veal Liver), Foie gras (Goose Liver or Fatty Duck), Mousse au chocolat (Dessert), Madeleine (Cake-like Cookie), Matelote (Fish Stew), Cargolade (Escargot in Catalan Style), and Ratatouille (Vegetable Stew).

In fact, the Indian curry has carved a name for itself on the food map of the world. From London to Libya, from Montreal to the Middle East--the food lovers simply love devouring the spicy and lip-smacking Indian food. The entire South East Asian region loves the spicy and hot Indian food and the local cuisines of the area show strong Indian influence. This is not to suggest that Indian cuisines do not reflect foreign influence. Actually, the Indian food shows strong foreign influence especially of the Middle East, Central Asia, Mediterranean, and Europe (particularly Portugal and England). Tomato, chilies, and potato used generously and commonly in preparing the various food items in India were introduced to India by Portugal. Clever and generous use of various spices such as chilies, black mustard, cumin, turmeric, fenugreek, ginger, coriander, asafetida, garlic, and clove distinguish the Indian food which is, interestingly, identified by its distinct aroma, flavor and color.

Dairy products such as milk, paneer, ghee (clarified butter), and yoghurt are used in a higher proportion in the North Indian cuisine whereas South Indian cuisine uses unaltered milk products in large quantities. North Indian gravies are typically dairy-based and employ thickening agents such as cashew or poppy seed paste. Milk-based sweets are also very popular fare, being a particular specialty in Bengal and Orissa. Other common ingredients include chilies, saffron, and nuts. The Indian pancake 'roti' or 'paratha' (flat breads) are usually cooked with the use of a 'tawa' or a griddle while baking breads such as 'naan', 'kulcha' and 'khakhra is usually accomplished in a large and cylindrical coal-fired oven called the 'tandoor' even a popular dish called 'tandoori' chicken is cooked in tandoor. Other type of breads include puri and bhatoora, which are cooked by deep frying in oil, are also common. Most of North Indian food, like anywhere else in India, is vegetarian. There is an amalgamation of cuisines throughout India. Fish and seafood are very popular in the coastal states of Orissa and West Bengal.

It is precisely this fact that makes it one of the hot favorites of the world. The best example of the influence of history on Italian cuisine is Trentino-Alto Adige, a region in Italy. A large number of external factors have played an important role in shaping the cuisine of this region. It is an amazing blend of popular Italian recipes and the specific, unique flavor of this region.
